Essential Ingredients for the Perfect Grilled Sausage Sub

Crafting the perfect grilled sausage sub starts with selecting high-quality ingredients. Each component plays a vital role in building the robust flavor profile and satisfying texture of this delicious sandwich. Here’s a detailed look at what you’ll need and why it matters:

Sausage Sub ingredients including sausages, bell peppers, onion, cheese, and rolls laid out on a cutting board.
  • Sausage: For this particular recipe, we opted for a classic Polish sausage, known for its rich, smoky flavor and satisfying snap. However, the beauty of this recipe lies in its adaptability. You can easily substitute Italian sausages (mild or spicy), juicy bratwurst, or even leaner chicken or turkey sausages if you prefer. Consider the flavor profile you desire—smoked, spicy, or herby—and choose accordingly.
  • Bell Peppers: A vibrant mix of red and yellow bell peppers provides a wonderful sweetness and a pleasant, tender-crisp bite once sautéed. These colorful additions not only enhance the visual appeal but also contribute essential nutrients and a fresh counterpoint to the rich sausage. Feel free to use green bell peppers for a slightly more robust, less sweet flavor, or orange for an even sweeter profile.
  • Shredded Cheese: Mozzarella cheese is our top choice for its incredible melting properties, offering a creamy, gooey texture that perfectly binds the ingredients together with every bite. If you’re feeling adventurous, provolone cheese offers a sharper, more piquant flavor, while Monterey Jack or even a mild cheddar could also work beautifully, adding their own unique character to the sub.
  • French Rolls: These sturdy, crusty rolls are absolutely ideal for grilled sausage subs. Their robust structure holds up well to the juicy sausage and plentiful toppings, preventing sogginess. While French rolls are recommended, don’t hesitate to use other alternatives like hoagie rolls, pretzel buns for a unique twist, or even regular hot dog buns in a pinch. The key is a bun that can withstand a good grilling and holds all the delicious fillings.
  • Seasoning: An all-purpose seasoning blend is crucial for tying all the flavors together. It provides the right balance of salt, pepper, and other aromatics, enhancing both the vegetables and the sausage. If you’re using a specific rub like “Dad’s All Purpose Rub,” it likely contains a blend of savory spices designed to complement grilled meats and vegetables. If not, a simple mix of garlic powder, onion powder, paprika, salt, and black pepper will work wonderfully.
  • Unsalted Butter & Minced Garlic: This dynamic duo is transformed into a fragrant garlic butter, essential for toasting the rolls. The butter adds richness, while the minced garlic infuses the bread with an irresistible aroma and flavor, creating a perfect foundation for your sub.

Step 1: Sautéing Vibrant Vegetables on the Grill

Preparing your vegetables on the grill infuses them with a wonderful smoky essence that perfectly complements the grilled sausage. For this recipe, we used a combination of a yellow onion and vibrant red and yellow bell peppers. However, feel free to personalize your sub by choosing your favorite vegetables to sauté—think mushrooms, zucchini, or even jalapeños for a spicy kick. The goal is to achieve a texture that is tender yet retains a slight crunch, adding a delightful textural contrast to your sandwich.

Begin by preheating your grill to a consistent 375 degrees Fahrenheit. It’s important to set it for direct heat, ensuring even and efficient cooking. While the grill comes to temperature, thinly slice your chosen vegetables. Aim for uniform slices, as this will help them cook evenly. Once sliced, transfer them into a durable grill pan or a cast-iron skillet suitable for grilling. This prevents smaller pieces from falling through the grates and ensures they cook beautifully.

Add a generous knob of butter to the grill pan with the vegetables—approximately 2 tablespoons for this recipe. The butter not only adds richness but also aids in caramelization. Season generously with an all-purpose seasoning blend, such as Dad’s All Purpose Rub, which will impart a balanced savory flavor. Toss the vegetables occasionally using tongs to ensure they cook evenly and develop a beautiful char without burning. Continue to sauté until they become tender, yet still possess a slight crispness. This “al dente” texture is key to a great sub. Once cooked to perfection, remove the grill pan from the heat and set the sautéed vegetables aside.

Step 2: Grilling the Sausage to Perfection

Achieving a perfectly grilled sausage is a simple yet crucial step for an exceptional sub. The key is to create a beautiful, caramelized crust on the exterior while ensuring the interior is juicy and thoroughly cooked. With your grill still at 375 degrees Fahrenheit on direct heat, you’re ready to get those sausages sizzling.

Before placing your sausages on the grill, gently score them a few times across the surface with a knife. This small but significant step helps prevent the sausages from bursting during cooking, allows excess fat to render out, and creates more surface area for that delicious crust and smoky flavor to develop. Place the scored sausages directly over the heat. Flip them every minute or so, rotating them regularly to ensure an even cook and to develop a deep, appealing crust on all sides. This constant turning prevents burning and promotes uniform caramelization.

Continue grilling until the sausages are thoroughly cooked through and boast a tempting golden-brown char. If you’re unsure, you can check the internal temperature; for most sausages, it should reach 160°F (71°C). Once done, remove the sausages from the grill and set them aside to rest briefly while you prepare the rolls.

Assembling Your Ultimate Sausage Sub

Now for the grand finale: assembling your mouthwatering grilled sausage subs! This stage brings all the perfectly cooked components together into a symphony of flavors and textures.

In a small, heatproof bowl, melt about 4 tablespoons of unsalted butter. To this, mix in 2 tablespoons of finely minced garlic. This garlic butter is going to be the secret weapon for elevating your rolls. Carefully slice your French rolls (or preferred buns) lengthwise, without cutting all the way through, creating a pocket. Generously spread the fragrant garlic butter mixture on the inside of each roll. This not only adds incredible flavor but also helps the rolls toast beautifully on the grill.

Once the sausages are perfectly grilled and the rolls buttered, it’s time to build your masterpiece. Carefully place a grilled sausage into each prepared roll. Spoon a generous amount of the sautéed bell peppers and onions over the sausage. Finally, sprinkle a good amount of shredded mozzarella cheese over the top of the vegetables. Return these assembled subs to the grill, closing the lid, for just a minute or two. The goal here is to gently toast the buns and, most importantly, allow that delicious mozzarella cheese to melt into a luscious, gooey blanket over your fillings.

Once the cheese is perfectly melted and bubbly, remove the subs from the grill. For an extra layer of flavor, drizzle with a touch of dijon mustard for a tangy kick or sprinkle with some freshly chopped parsley for freshness and a pop of color. Serve immediately and enjoy your perfectly crafted grilled sausage sub!

Frequently Asked Questions About Grilled Sausage Subs

How do I grill sausages perfectly on different types of grills?

Grilling sausages is straightforward. For a charcoal grill, create a two-zone fire: a hotter direct heat side and a cooler indirect heat side. Start the sausages over direct heat, flipping every minute to achieve a beautiful, seared crust on all sides. Once seared, move them to the indirect heat to finish cooking through without burning, typically for an additional 8-10 minutes, depending on thickness. For a gas grill, preheat to medium-high (375-400°F) and cook over direct heat, turning frequently until well-browned and cooked through. Always aim for an internal temperature of 160°F (71°C) for most sausages.

Can I use different types of sausages for this recipe?

Absolutely! This grilled sausage sub recipe is incredibly versatile. While we used smoked Polish sausage, a variety of options will work wonderfully. Italian sausage (sweet or hot) will lend a rich, herbaceous flavor. Bratwurst offers a distinct German taste, often complemented by sauerkraut. Chicken or turkey sausages are excellent leaner alternatives, providing a lighter option without sacrificing flavor. Even plant-based sausages can be used for a vegetarian-friendly version. Experiment with what you love!

What are some great side dishes to pair with grilled sausage subs?

Grilled sausage subs pair well with a wide array of side dishes. Classic choices include creamy potato salad, tangy coleslaw, or a simple green salad with a vinaigrette. For something warm, consider grilled corn on the cob, baked beans, or crispy sweet potato fries. If you’re hosting a barbecue, serve them alongside some refreshing watermelon slices or a light pasta salad to complete the meal.

Can I prepare any components of the sausage sub in advance?

Yes, to make meal prep easier, you can definitely prepare some elements ahead of time. The bell peppers and onions can be sliced and sautéed a day or two in advance and stored in an airtight container in the refrigerator. You can also prepare the garlic butter mixture and keep it refrigerated. When it’s time to eat, simply grill the sausages, warm up the veggies, spread the butter on the rolls, and assemble your subs for a quick and fresh meal.

Grilled Sausage Sub

By:
Maciek Zurawski
Sausages are a great summer staple. With just a few ingredients, create an amazingly flavorful sausage sub for lunch or dinner.
Prep Time:
5 minutes
Cook Time:
15 minutes
Servings:
4 People

Ingredients

  • 4 Sausage links
  • 2 Bell peppers
  • 1 Yellow onion
  • 4 Sandwich rolls
  • 1/4 cup Shredded mozzarella cheese
  • 6 tbsp Unsalted butter
  • 2 tbsp Minced garlic
  • 1 tbsp Dad’s All Purpose rub

Instructions

  • Start by preheating your grill to 375 degrees Fahrenheit and set it for direct heat.
  • Slice the bell peppers and yellow onion, then place them in a grill pan on the hot grill. Add 2 tablespoons of butter and season with Dad’s All Purpose Rub. Toss the veggies occasionally until they are tender but still have a slight crunch. Remove from the grill and set aside.
  • Score the sausages (Polish, Italian, or your choice) a few times across the surface. Place them on the grill over direct heat, maintaining the same 375-degree temperature. Flip them every minute until a nice, even crust develops all around and they are cooked through.
  • In a small bowl, melt 4 tablespoons of butter and mix in the minced garlic. Brush this fragrant garlic butter mixture generously on the inside of the sandwich rolls.
  • Once the sausages are done, place one into each prepared roll. Top generously with the sautéed vegetables, then sprinkle with shredded mozzarella cheese. Place the assembled subs back on the grill, closing the lid briefly, to allow the cheese to melt and the rolls to lightly toast. Serve immediately with optional dijon mustard or fresh parsley.

Notes

For an even richer vegetable flavor and presence, feel free to add other ingredients like sliced mushrooms or zucchini along with the bell peppers and onions.

While French rolls are highly recommended for their sturdy texture, don’t limit yourself. Pretzel rolls offer a unique flavor, hoagie rolls are a classic choice, and even standard hot dog buns will work well.

The choice of sausage is entirely up to your preference! A smoked Polish sausage adds a distinct character, but an Italian sausage (mild or spicy) would be fantastic. For a lighter option, opt for chicken or turkey sausage.
