Unlock the incredible flavors of the backyard with Traeger Smoked Cornish Game Hens. These miniature birds, often overlooked, are a true culinary gem when prepared on a pellet smoker. Their small stature, compared to a full-sized broiler chicken, makes them an ideal choice for a quick yet impressive family meal. What sets Cornish game hens apart in the smoking world is their efficiency in absorbing smoke. Their smaller mass means a greater surface-area-to-volume ratio, allowing them to soak up more of that rich, aromatic smoke from your Traeger, infusing every bite with a deep, savory essence that’s simply irresistible.

Understanding Cornish Game Hens: More Than Just “Small Chickens”
Despite their name, Cornish game hens are not a specific breed that is inherently female or a “game” bird in the traditional sense. In fact, they can be either male or female broiler chickens, which are young chickens specifically bred for their meat production. These specialized birds are designed to reach slaughter weight at a very young age, typically under five weeks old, and are celebrated for their tender meat and relatively large breast development in a short timeframe.
The Cornish game hen, as we know it, is a crossbreed, most commonly a hybrid of Cornish chickens and White Plymouth Rock chickens. This genetic combination results in a bird that, by the time it reaches the butcher, weighs in at less than two pounds, usually between one and two pounds. This rapid growth and compact size contribute to their remarkably tender texture and allow them to cook much faster than a standard broiler, making them perfect for weeknight dinners or when you want to impress guests without spending hours in the kitchen. Their diminutive size also means they cook evenly and are superb at absorbing marinades and, as you’ll discover, the profound flavors of wood smoke.

Essential Ingredients for Irresistible Traeger Smoked Cornish Game Hens
Creating succulent smoked Cornish game hens on your Traeger requires only a handful of common ingredients. The magic happens through a simple yet effective dry rub that enhances the bird’s natural flavors, coupled with aromatic stuffing that infuses the meat from within. Here’s what you’ll need to get started on your culinary journey to perfectly smoked poultry:
- **Cornish Game Hens:** Aim for birds weighing 1 to 2 pounds each. Fresh is best, but frozen and properly thawed works perfectly.
- **Olive Oil:** A light coating of olive oil acts as a binder for the dry rub, helps crisp the skin, and keeps the meat moist during cooking.
- **Garlic:** Fresh garlic cloves, lightly smashed, release their pungent aroma and flavor directly into the bird’s cavity.
- **Lemon:** Slices of fresh lemon provide a bright, citrusy note that cuts through the richness of the chicken and the smoky flavor.
- **Garlic Powder:** A staple in any good dry rub, garlic powder adds a foundational savory depth.
- **Black Pepper:** Freshly ground black pepper contributes a subtle heat and aromatic complexity.
- **Kosher Salt:** Essential for seasoning, kosher salt helps to draw out moisture initially, then reabsorbs it, tenderizing the meat and enhancing flavor. It also aids in developing that coveted crispy skin.
Beyond these core ingredients, feel free to experiment with other herbs like rosemary or thyme, or a touch of smoked paprika for an extra layer of flavor in your rub. The beauty of this recipe lies in its simplicity and versatility, allowing you to tailor it to your palate.

How to Achieve Perfectly Smoked Cornish Game Hens on Your Traeger
Smoking Cornish game hens on a Traeger is a straightforward process that yields incredibly flavorful and tender results. Follow these steps for a memorable meal:
Step 1: Prepare and Season the Game Hens
Begin by ensuring your Cornish game hens are fully thawed and patted thoroughly dry with paper towels. Removing excess moisture from the skin is crucial for achieving that desirable crispy texture later on. In a small bowl, combine your garlic powder, Kosher salt, and black pepper, mixing them thoroughly to create a balanced dry rub. Next, generously coat each Cornish game hen with olive oil. Don’t be shy; ensure the oil reaches every crevice of the bird, including under the wings and legs. This oil acts as a binder for your rub and helps promote a golden, crispy skin. Once oiled, liberally sprinkle the prepared dry rub over the entire surface of the Cornish game hens. Crucially, remember to season the inside of the cavity as well, ensuring flavor penetrates every part of the bird.
Step 2: Aromatic Stuffing for Enhanced Flavor
To infuse even more flavor and moisture into the hens, prepare your aromatics. Take the garlic cloves and smash them just enough to break them open, releasing their oils and fragrance, but keep them mostly intact so they don’t disintegrate during cooking. Stuff these smashed garlic cloves into the cavity of each Cornish game hen. Along with the garlic, add several lemon slices. As the hens cook, the heat will gently release the aromatic compounds from the garlic and the bright, tangy notes from the lemon, creating an internal steam bath of flavor that deeply permeates the meat.
Step 3: Marinate for Deeper Flavor Penetration
Once seasoned and stuffed, the hens need time to marinate and allow the flavors to meld. Cover the birds loosely and place them in the refrigerator. Allow them to rest for a minimum of 1 hour, though for optimal flavor infusion and tenderness, aiming for 4 to 8 hours is highly recommended. This marinating period acts as a dry brine, allowing the salt to work its magic by drawing out moisture and then reabsorbing it, resulting in a more succulent, flavorful bird with exceptionally tender meat.
Step 4: The Traeger Smoking Process
When you’re ready to smoke, remove the hens from the fridge and preheat your Traeger or other pellet smoker to 225°F (107°C). A reliable smoker like the Traeger Pro 780 is perfect for this. Once your smoker reaches the target temperature and is producing steady, clean smoke, carefully place the seasoned hens directly on the grill grates. Smoke them at this low temperature for 45 to 60 minutes. This initial low-temperature phase is crucial for maximizing smoke absorption, imparting that signature smoky flavor. After this initial smoking period, increase the temperature of your smoker to 375°F (190°C). Continue to cook the hens for another 20 to 30 minutes, or until the internal temperature of the thickest part of the bird (avoiding bone) reaches 160°F (71°C).
Step 5: The Essential Rest
Once the Cornish game hens reach 160°F (71°C), carefully remove them from the Traeger. Place them on a cutting board or platter and cover them loosely with aluminum foil. Allow the birds to rest for 10 minutes. This resting period is vital for two reasons: firstly, it allows the juices within the meat to redistribute, resulting in a more tender and moist bird. Secondly, it facilitates “carryover cooking,” where the internal temperature of the meat will continue to rise by a few degrees, ensuring it reaches the food-safe temperature of 165°F (74°C).
Step 6: Serve and Enjoy!
After the resting period, and once the internal temperature has consistently reached 165°F (74°C), your Traeger Smoked Cornish Game Hens are ready to be devoured! These elegant birds can be served whole, presenting each person with their own individual chicken, which makes for a truly fun and special family dinner. Alternatively, you can easily cut each bird in half lengthwise and share them, offering a more casual approach. Pair them with your favorite sides for a complete and utterly satisfying meal.

Expert Tips for Smoking Cornish Game Hens Like a Pro
Achieving consistently perfect smoked Cornish game hens is easy with a few insider tips:
- **Get Hands-On with Seasoning:** Don’t be afraid to get your hands dirty! Thoroughly rub the entire surface of each Cornish hen with oil and seasoning. Pay special attention to working some of the rub under the skin and deep into the cavity. This ensures maximum flavor penetration and a delicious crust.
- **Master the Thermometer:** An accurate meat thermometer is your best friend in grilling and smoking. Always use one to ensure the birds are cooked thoroughly and safely, reaching the target internal temperature without overcooking.
- **Consider Spatchcocking:** While not strictly necessary for Cornish hens due to their small size, spatchcocking (butterflying) them can lead to even faster and more uniform cooking, and an even crispier skin. It flattens the bird, exposing more surface area to the smoke and heat.
- **The Power of Pellets:** The type of wood pellets you choose can significantly impact the final flavor. For poultry, fruitwoods like apple or cherry, or a balanced blend like pecan or oak, offer a sweet and mild smoke that complements the delicate flavor of Cornish hens without overpowering them.

Storing and Reheating Smoked Cornish Game Hen Leftovers
If you happen to have any Traeger smoked Cornish game hens left over (a rare but possible occurrence!), they are excellent for future meals. Properly stored, these delicious birds can be kept in an airtight container in the refrigerator for 3-4 days. For longer storage, you can freeze them for 2-3 months. To freeze, allow the hens to cool completely, then wrap them tightly in plastic wrap and then in foil before placing them in a freezer-safe bag or container.
Reheating them is also very simple, and you have a few options to ensure they retain their deliciousness:
- **Air Fryer Method (Recommended for Crispy Skin):** If you own an air fryer, this is an excellent way to bring back that crispy skin. Place the leftover hens in the air fryer basket and cook at 340°F (170°C) for 15 to 20 minutes, or until heated through. For the last 5 minutes, increase the temperature to 400°F (200°C) to re-crisp the skin and make them just as delicious as they were fresh off the smoker.
- **Oven Method:** Preheat your oven to 380°F (195°C). Place the Cornish game hens in an oven-safe dish, optionally adding a splash of chicken broth to the bottom of the dish to help keep them moist. Cover loosely with foil to prevent drying out and reheat for 20 to 25 minutes, or until thoroughly warmed. For a crispier skin, remove the foil for the last 5-10 minutes.
- **Creative Leftover Ideas:** Don’t limit yourself to just reheating the whole bird. Shred the leftover meat to use in salads, sandwiches, tacos, quesadillas, or even a flavorful smoked chicken soup. The smoky essence adds a fantastic depth to any dish.
Perfect Sides to Complement Your Smoked Cornish Game Hens
A great meal is always elevated by thoughtful side dishes. Here are some fantastic pairings for your Traeger Smoked Cornish Game Hens that create a harmonious and satisfying dining experience:
- **Air Fryer Parsley Baby Potatoes:** These air fryer parsley baby potatoes are an absolute winner. The vibrant parsley and savory salt infuse into the potato skins, which are then fried to a beautiful crispness in the air fryer. This is a brilliant way to put your air fryer to work while your Traeger masterfully smokes your Cornish game hens, saving you oven space and time.
- **Smoked Jalapeño Popper Mac and Cheese:** For a truly indulgent and flavorful side, since your Traeger is already fired up, why not try this jalapeño popper mac and cheese? Every creamy, cheesy bite delivers the quintessential taste of a jalapeño popper, with the added bonus of smoky depth from the Traeger. It’s an unexpectedly perfect companion to the delicate flavor of the Cornish game hens.
- **Grilled Asparagus or Green Beans:** Simple, fresh vegetables grilled alongside your hens can be a fantastic complement. A light char adds a smoky dimension that pairs beautifully with the poultry.
- **Creamy Coleslaw:** The cool, tangy crunch of a homemade coleslaw offers a refreshing contrast to the rich, smoky chicken.
- **Sweet Cornbread:** A warm, slightly sweet cornbread can be a comforting addition, perfect for soaking up any delicious juices.

Traeger Smoked Cornish Game Hens
2 to 4 servings
10 minutes
1 hour 15 minutes
1 hour 25 minutes
These Cornish game hens are stuffed with garlic and lemon and smoked to perfection on the Traeger grill. The meat is juicy and the skin is perfectly brown and crisp.
Ingredients
- 2 Cornish game hens
- 1 to 2 tablespoons olive oil
- 1 tablespoon garlic powder
- 1 tablespoon Kosher salt
- 1 tablespoon black pepper
- 2 bulbs of garlic (20-24 cloves)
- 1 to 2 lemons, sliced
Instructions
- Rub olive oil on the game hens. Combine the garlic powder, salt, and pepper then sprinkle all over the hens. Make sure to sprinkle inside the cavity as well.
- Smash the garlic cloves slightly then stuff them inside the cavity of the hens. Stuff the lemon slices in the cavity.
- Cover the birds and place them in the fridge for at least 1 hour or up to 8 hours (see notes).
- Remove the birds from the fridge and preheat the smoker to 225°F (107°C).
- Place the hens on the grill. Smoke for 45 to 60 minutes at 225°F (107°C) then increase the heat to 375°F (190°C) and cook for 20 to 30 minutes or until they reach an internal temperature of 160°F (71°C).
- Remove the hens from the grill, cover them with foil and let them rest for 10 minutes. The temperature will continue to climb while the hens are resting. The final temperature of the hens should be 165°F (74°C). You can serve the Cornish game hens whole or split them in half.
Notes
- Use a trusty meat thermometer so you can monitor the cook and ensure the best results. We recommend the ThermoWorks Signals as a leave-in thermometer or an instant-read like the ThermoWorks ONE.
- Letting the birds sit after you season them will help the flavors soak into the game hens. It is an easy way to dry brine the birds and it will help them stay tender, moist, and much more flavorful. Let them brine for anywhere from 1 to 8 hours. If you have the time, we highly recommend giving them the full 8 hours.
- You can smoke them at 225°F (107°C) for longer than 60 minutes if you want. We like to increase the temperature in the final 20 to 30 minutes in order to get a nice brown crust on the skin. If you don’t increase the temp, the hens will need an additional 45 to 60 minutes at the lower temperature.
