Why This Smoked Beef Chili Will Be Your New Favorite

This isn’t just another beef chili recipe; it’s a culinary experience designed to impress. Our **Over the Top Beef Chili** stands out by introducing an innovative smoking technique that infuses every component with incredible flavor. Instead of browning the meat in the pot, we smoke a seasoned beef patty directly above the simmering chili base. This method allows the delicious smoky beef drippings to slowly fall into the chili below, creating an unparalleled depth of flavor that’s both rich and complex.

Beyond the unique smoking process, this recipe masterfully layers a symphony of savory spices, robust beef, zesty tomatoes, and wholesome beans. The perfect blend of chili powder, earthy cumin, a touch of fiery cayenne, and our special secret ingredient (coco powder!) comes together to deliver a chili that balances heat with profound umami. The slow simmering process ensures all these magnificent flavors meld beautifully, resulting in a thick, meaty chili that’s bold, deeply satisfying, and truly addictive. Prepare for rave reviews when you serve this extraordinary smoked beef chili.

Essential Ingredients for the Ultimate Over the Top Beef Chili

A vibrant selection of fresh ingredients laid out, including ground beef, Italian sausage links, various spices, diced vegetables, and canned goods for making a hearty chili.

Crafting the perfect chili starts with selecting the right ingredients. Each component in this **smoked beef chili** recipe plays a crucial role in building its signature “over the top” flavor profile:

  • Ground Beef: We recommend an 80/20 blend of ground chuck. This ratio provides the ideal balance of lean meat and fat, ensuring your chili is flavorful, moist, and tender.
  • Italian Sausage: Adding hot Italian sausage links (casings removed) introduces a fantastic spicy kick and an additional layer of savory depth that complements the ground beef beautifully.
  • Broth: Low-sodium beef broth forms the liquid base of our chili, allowing you to control the overall saltiness while adding a rich beefy foundation.
  • Aromatic Spices: A meticulously curated blend of cayenne pepper for heat, chili powder for classic chili flavor, cumin for earthy warmth, garlic and onion powder for foundational aromatics, and a touch of salt and pepper. We also incorporate a secret ingredient: a dash of Dad’s Taco Seasoning to further enhance the robust and hearty profile.
  • Baking Cocoa Powder: This might sound unusual, but a tablespoon of unsweetened baking cocoa powder is a game-changer! It doesn’t make the chili sweet; instead, it deepens the color, balances the acidity of the tomatoes, and adds an incredible layer of richness and complexity, acting as a secret umami booster.
  • Beans: No chili is complete without beans! We use a combination of kidney and pinto beans, which contribute both texture and additional protein, making the chili truly substantial. Be sure to drain and rinse them thoroughly.
  • Fresh Vegetables: Sautéed and caramelized diced onion and green bell peppers provide essential aromatics and a subtle sweetness that forms the backbone of the chili’s flavor.
  • Tomato Products: A trio of diced tomatoes (especially with green chili for extra kick), tomato sauce, and concentrated tomato paste creates a rich, complex, and robust tomato base that is vital for a truly satisfying chili.

Preparing the Rich Chili Base

Diced onions and bell peppers being sautéed in a dutch oven with spices, forming the flavorful base of the chili.

The foundation of our **Over the Top Beef Chili** begins with a deeply flavored chili base. While the star of the show – the smoked beef – will cook separately, the chili mix itself needs careful attention to develop its robust character. This approach is what truly sets our recipe apart, as the beef drippings will become the crowning glory.

Begin by selecting a sturdy Dutch oven, which will be your vessel for simmering this magnificent chili. Drizzle a generous amount of olive oil into the Dutch oven and place it over medium heat. Add your diced onion and green bell pepper. Sauté these aromatics gently until they soften and become translucent, releasing their natural sweetness and fragrant notes. This caramelization process is key to building a rich flavor base.

Once the vegetables are tender, it’s time to awaken the spices. Stir in the cumin, chili powder, cayenne pepper, a touch of Dad’s Taco Seasoning, garlic powder, onion powder, salt, and black pepper. Allow these spices to toast for about a minute, stirring constantly. This brief toasting period, known as “blooming,” intensifies their flavors and aromas, making them more potent and delicious.

Finally, incorporate the wet ingredients into your spice and veggie mixture. Add the tomato paste, tomato sauce, low-sodium beef stock, minced garlic, and the diced tomatoes with green chili. The diced tomatoes with green chili are specifically chosen to introduce an extra layer of subtle heat and complexity to the overall flavor profile. Stir all these ingredients thoroughly until well combined, creating a thick, vibrant chili base. This mixture will simmer patiently, awaiting the smoky goodness from the beef patty.

Crafting the Perfect Smoked Beef Patty

A large, flat beef patty seasoned and ready for smoking, placed on a cutting board.

The “Over the Top” magic truly happens with the smoked meat patty. For this, we combine 1 pound of 80/20 ground chuck with the meat from three hot Italian sausage links (remember to remove the casings!). This blend of beef and spicy sausage creates a dynamic flavor profile that’s incredibly robust and juicy once smoked. The Italian sausage brings an extra layer of savory spice and richness that elevates the chili to new heights.

Season the meat blend generously with the same delicious spice mixture used in the chili base: cumin, chili powder, cayenne, Dad’s Taco Seasoning, garlic and onion powder, salt, and pepper. This ensures flavor consistency throughout the dish and allows the beef to stand out beautifully. Gently mix the spices into the meat without overworking it, which can make the patty tough. Once seasoned, form the mixture into a large, round, flat patty, approximately 1-inch thick. This shape is crucial for even cooking and maximum smoke absorption.

Carefully place the formed meat patty onto a wire rack. This rack will then be positioned directly on top of your Dutch oven, allowing the beef to smoke and its flavorful drippings to slowly infuse into the simmering chili below. This ingenious setup ensures every drop of smoky, beefy goodness enriches your chili base.

Recipe Tip: Maximize Smoky Flavor

Always shape your seasoned meat mixture into a flat patty rather than a thick ball. A flatter surface area allows for greater exposure to the smoke, resulting in a more intense and delicious smoky flavor that will permeate both the meat and the chili below.

Smoking Your Over the Top Beef Chili to Perfection

Now for the main event: smoking your **Over the Top Beef Chili**. This method is where the chili transforms from good to truly extraordinary.

Start by preheating your grill to 300 degrees Fahrenheit (approximately 150 degrees Celsius). It’s essential to set your grill for indirect heat, creating an environment where the chili can gently simmer and the beef can absorb smoke without charring. While I prefer my Weber Searwood Pellet Grill for its consistent smoke and temperature control, any grill capable of maintaining a stable indirect heat will work perfectly. If you don’t have a smoker or grill, you can certainly cook this chili on a stovetop, though you’ll miss out on that signature smoky flavor, which is a key highlight of this “Over the Top” technique.

A Dutch oven filled with chili base, with a seasoned beef patty on a wire rack suspended above it, smoking on a grill.

Carefully place your Dutch oven, with the wire rack and beef patty positioned on top, onto the preheated grill. Close the lid and let the magic happen. Smoke the chili and meat for approximately 2 hours, or until the internal temperature of the beef patty reaches 150 degrees Fahrenheit (65 degrees Celsius). During this time, the beef patty will slowly cook and render, releasing succulent, smoky drippings directly into the chili base below. These drippings are pure liquid gold, adding an incredible depth of beefy, smoky flavor that simply cannot be replicated by traditional browning methods.

Once the beef patty has reached the desired internal temperature, it’s time to integrate it into the chili. Carefully remove the wire rack from the grill. Using a sturdy spoon or spatula, crumble the smoked beef into your chili. I recommend breaking it into slightly larger pieces; this provides a more satisfying texture and allows you to truly appreciate the smoky beef in every bite. Along with the crumbled beef, stir in your drained pinto and kidney beans. Return the Dutch oven to the grill (without the wire rack) and allow the chili to continue cooking for another hour, or until the beans are perfectly tender and all the flavors have had a chance to marry. The combination of the deep smokiness from the beef, the bold spiciness from the hot Italian sausage and cayenne pepper, and the zesty kick from the green chilis creates an unbelievably rich and complex chili experience. When the chili is ready, remove the Dutch oven from the grill and let it rest for a few minutes to allow the flavors to settle. Serve immediately, piping hot, and get ready for a truly exceptional meal. For another incredible smoked beef dish, be sure to explore my recipe for a Smoked and Shredded Italian Beef Sandwich.

Serving and Storing Your Hearty Chili

This **Over the Top Beef Chili** is fantastic on its own, but it truly shines with your favorite toppings. I love to garnish mine with crunchy Fritos chips, a generous sprinkle of sharp cheddar cheese, and a few dashes of my favorite hot sauce for an extra kick. Other great options include a dollop of sour cream or Greek yogurt, fresh cilantro, diced avocado, or even a squeeze of lime juice for brightness. It’s the perfect antidote to cold winter days and guaranteed to warm you from the inside out.

One of the many joys of a great chili is that it often tastes even better the next day, once the flavors have had more time to meld. To store leftovers, transfer the cooled chili to an airtight container and refrigerate for up to 4 days. For longer storage, this chili freezes beautifully for up to 3 months. When reheating, a splash of beef broth or water can help restore its perfect silky texture and consistency.

Frequently Asked Questions About Beef Chili

Should chili have beans?

The “beans or no beans” debate is a classic chili controversy, and frankly, it often divides chili enthusiasts right down the middle! In my opinion, beans are a fantastic addition. They contribute wonderful texture, help to thicken the chili, and add a wholesome, earthy flavor and substance that truly completes the dish. For this recipe, I highly recommend using both kidney and pinto beans for their complementary textures and flavors. Ultimately, the choice is yours, but for a truly hearty and well-rounded chili, beans are a must!

What types of protein can I use in chili?

While ground beef is the most traditional and common protein for chili, the possibilities are vast! For our “Over the Top” recipe, we use an irresistible blend of ground chuck and hot Italian sausage for maximum flavor. Other excellent protein options include: a mix of ground pork and beef, spicy chorizo sausage, leftover smoked brisket (shredded or chopped), or even cubed steak. For those looking for poultry, ground chicken or turkey can be used for a lighter chili. Vegetarians can create a robust chili by doubling up on beans, adding lentils, or incorporating plant-based meat substitutes.

Can I make this chili without a smoker or grill?

Absolutely! While the “Over the Top” smoking method adds an incomparable depth of smoky flavor, you can still make a fantastic version on your stovetop. Instead of smoking the patty, you would brown the seasoned ground beef and Italian sausage mixture in a separate pan until cooked through, then crumble it and add it to the simmering chili base as instructed. You might consider adding a dash of liquid smoke to the chili base for a hint of that smoky essence.

What are the best toppings for chili?

Toppings are where you can really personalize your chili experience! Classic favorites include shredded cheddar cheese, crunchy Fritos or tortilla chips, a dollop of sour cream or Greek yogurt, and a sprinkle of fresh chopped cilantro. For an extra kick, add sliced jalapeños (fresh or pickled) or a drizzle of your favorite hot sauce. Diced avocado, chopped green onions, and even a squeeze of fresh lime juice can also add wonderful freshness and balance.

  • 1 tbsp Chili powder
  • 1/2 tbsp Salt

  • 1 tsp Onion powder
  • 1 tbsp Baking coco powder
  • 1 tbsp Minced garlic
  • 15 oz Diced tomatoes with green chili
  • 15 oz Tomato sauce
  • 6 oz Tomato paste
  • 15.5 oz Kidney beans – drained
  • 15.5 oz Pinto beans – drained

Smoked Meat Patty Ingredients

  • 1 lb Ground Chuck 80%/20% blend
  • 3 Links of hot Italian Sausage
  • 1 tbsp Cumin
  • 1 tbsp Chili powder
  • 1/2 tbsp Salt
  • 1/2 tbsp Pepper
  • 1/2 tbsp Taco seasoning
  • 1 tsp Cayenne pepper
  • 1 tsp Garlic powder
  • 1 tsp Onion powder

Instructions

  • In a large Dutch oven, sauté the diced onions and bell pepper over olive oil until the vegetables are softened and translucent.
  • Add the spices to the softened vegetables: cumin, chili powder, cayenne, salt, pepper, garlic powder, onion powder, and taco seasoning. Stir well and cook for about 1 minute until fragrant.
  • Next, add the beef broth, diced tomatoes (with green chili), tomato paste, tomato sauce, minced garlic, and cocoa powder. Mix all ingredients together thoroughly to form the chili base.
  • In a separate bowl, combine the ground chuck with the meat from the hot Italian sausage links (ensure casings are removed).
  • Add all the meat spices (cumin, chili powder, cayenne, salt, pepper, taco seasoning, garlic powder, onion powder) to the beef and sausage mixture. Mix gently until just combined.
  • Form the seasoned meat mixture into a large, round, flat patty. Place this patty on a wire rack, and then position the wire rack directly on top of the Dutch oven containing the chili base.
  • Preheat your grill or smoker to 300 degrees F (150 degrees C), setting it for indirect heat.
  • Carefully place the Dutch oven (with the meat patty on top) onto the preheated grill.
  • Smoke the beef patty and chili for approximately 2 hours, or until the beef patty reaches an internal temperature of 145-150 degrees F (63-65 degrees C). The beef drippings will infuse the chili with smoky flavor.
  • Remove the wire rack and smoked beef patty from the grill. Crumble the beef patty into larger pieces and add them to the chili in the Dutch oven, along with the drained pinto and kidney beans. Stir everything together.
  • Return the Dutch oven (without the rack) to the grill and continue to cook for another hour, or until the beans are tender and the chili has thickened to your desired consistency. Remove from the grill and serve immediately, garnished with your favorite toppings like chips, cheese, and hot sauce.

Notes

  • When shaping the meat into a patty rather than a ball, it will lie flat on the wire rack and absorb more of that delicious smoky flavor.
  • When crumbling the smoked beef patty, aim for slightly larger pieces. This provides a much better texture and more substantial bites of meat in the finished chili.
