Essential Ingredients for Your Blackstone Philly Cheesesteak
Crafting the perfect Philly Cheesesteak starts with selecting the right ingredients. Here’s a breakdown of what you’ll need and why each component is crucial:
- Thinly Sliced Steak: This is the heart of your cheesesteak. The easiest option is to ask your butcher for thinly sliced steak, ideally ribeye or top-round, known for their rich beefy flavor and tenderness. If slicing yourself, purchase a ribeye or top-round steak and place it in the freezer for about 30 minutes before slicing. This firms up the meat, making it much easier to achieve those signature paper-thin slices with a sharp knife. Thin slices ensure quick cooking and a melt-in-your-mouth texture.
- White Onion: White onions are preferred for their mild, slightly sweet flavor that caramelizes beautifully on the griddle without overpowering the other ingredients. When cooked down, they add a depth of sweetness and a soft, yielding texture that is quintessential to an authentic cheesesteak.
- Red Bell Pepper: Adding a vibrant splash of color, red bell peppers contribute a natural sweetness and a satisfying crunch that complements the savory steak. They soften just enough to integrate into the sandwich while still providing a pleasant texture.
- Green Bell Pepper: Slightly tarter than their red counterparts, green bell peppers offer a fresh, herbaceous note and further bulk out your cheesesteak, providing additional layers of flavor and texture. Together with red bell peppers, they create a balanced vegetable mix.
- Oil: A high smoke point oil is essential for griddle cooking. Avocado oil is an excellent choice due to its stability at high temperatures, but vegetable oil, canola oil, or even a good quality grapeseed oil will work just as well for searing the meat and sautéing the vegetables without burning.
- Salt: A fundamental seasoning that enhances the natural flavors of the beef and vegetables. Don’t skimp on salt; it’s crucial for bringing out the best in your ingredients.
- Black Pepper: Freshly ground black pepper adds a subtle, earthy spiciness that perfectly complements the creamy cheese and tender steak, providing a gentle warmth to the overall profile.
- Garlic Powder: This seasoning imbues the beef with an aromatic depth that is both comforting and incredibly flavorful, without overwhelming the delicate balance of the other components. It’s a secret weapon for boosting the savory notes.
- Butter: Unsalted butter is ideal for toasting your hoagie rolls. It allows you to control the overall saltiness of your dish and ensures a rich, golden-brown crust while keeping the interior soft and warm. It also helps in dispersing the savory flavors throughout each roll.
- Hoagie Rolls: The foundation of your sandwich. Seek out high-quality hoagie rolls from a local bakery. A good roll should be sturdy enough to hold the generous filling without becoming soggy, yet soft enough to offer a pleasant chew. A fresh, slightly crusty roll is key to the ultimate cheesesteak experience.
- Cheese Whiz: For many, Cheese Whiz is the traditional and non-negotiable choice for an authentic Philly Cheesesteak. Its smooth, creamy texture and sharp, cheddar-like flavor melt beautifully into the hot steak, providing that iconic gooeyness and tangy kick.
- Provolone (optional): For those who prefer a more traditional or a layered cheese experience, provolone offers a semi-sharp, slightly nutty flavor that adds wonderful depth and a satisfying “cheese pull” to your sandwich. You can use it in conjunction with Cheese Whiz or as a standalone option for a different, yet equally delicious, take.

Crafting Your Perfect Blackstone Philly Cheesesteak: Step-by-Step Guide
Creating an authentic and incredibly delicious Philly Cheesesteak on your Blackstone griddle is a straightforward process when you follow these steps. Get ready for a symphony of sizzles and aromas!
- Preheat Your Blackstone Griddle: Begin by heating your Blackstone griddle. The key to successful griddle cooking is zone heating. I recommend setting one side to a ripping hot, medium-high temperature for searing the steak, and keeping the other half on a cooler, medium-low setting for sautéing vegetables and toasting rolls. This allows you to manage different components of the cheesesteak simultaneously and efficiently.
- Season and Prepare the Steak: Take your thinly sliced steak and season it generously with half of your salt, black pepper, and garlic powder. Ensure the seasoning is evenly distributed. Set the seasoned steak aside, allowing it to rest and absorb the flavors while you prepare the vegetables.
- Slice the Vegetables: Thinly slice your white onion, red bell pepper, and green bell pepper. Uniform slices will ensure even cooking and a consistent texture in your finished sandwich.
- Sauté the Vegetables: Drizzle a tablespoon of oil onto the cooler side of your preheated griddle. Add the sliced onions and bell peppers, spreading them out evenly. Season with the remaining salt, pepper, and garlic powder. Cook for 5-10 minutes, stirring occasionally, until the onions become beautifully translucent and begin to caramelize, and the peppers are tender-crisp.
- Relocate Vegetables: Once the vegetables are perfectly tender and slightly caramelized, use your griddle spatula to move them to the very edge of the cooler side of the griddle. This will keep them warm without overcooking while you focus on the steak.
- Prepare and Toast Hoagie Rolls: While the steak cooks, butter the insides of your hoagie rolls generously. Place them cut-side down on the medium-low heat zone of the griddle, ideally between the hotter and cooler sections. Toast for about 3-5 minutes, or until they are golden brown and slightly crispy, yet still soft in the center. This creates a protective barrier for the filling and adds essential texture.
- Cook and Chop the Steak: Now, it’s time for the star of the show. Add another tablespoon of oil to the ripping hot side of the griddle. Lay your seasoned, thinly sliced steak in a single layer. Cook for just 2-3 minutes per side. While it cooks, use two turners or spatulas to aggressively chop and separate the meat into smaller, bite-sized pieces directly on the griddle. This technique is crucial for achieving the classic cheesesteak texture. Avoid overcooking; thinly sliced steak cooks very quickly and you want it to remain tender.
- Combine Steak and Veggies, Portion, and Cheese: Once the steak is perfectly cooked and chopped, push the cooked vegetables back onto the steak, mixing them gently. Divide the steak and veggie mixture into three equal piles on the griddle, corresponding to the number of sandwiches you’re making. Immediately place 2 tablespoons of Cheese Whiz on top of each pile. If using, also add 2 slices of provolone cheese over each mound for extra gooeyness and flavor variety.
- Melt the Cheese to Perfection: Quickly cover each cheesesteak pile with a basting dome (or a large metal bowl). To create steam and help the cheese melt rapidly and evenly, splash a small amount of water (about a tablespoon) onto the hot griddle just outside the dome. Let the cheese melt for 2-3 minutes, until it’s wonderfully bubbly and fully incorporated into the meat and vegetables.
- Assemble and Serve: Carefully lift a pile of the cheesy steak and vegetable mixture using your turner and place it directly onto a toasted hoagie roll. Repeat for the remaining sandwiches. Serve your magnificent Blackstone Philly Cheesesteaks immediately and savor every hot, gooey, and flavorful bite!

Expert Tips for a Flawless Blackstone Philly Cheesesteak
Achieving cheesesteak perfection on your Blackstone griddle is easier than you think with these expert tips:
- Mastering Thin Slices: If your butcher can’t thinly slice the steak for you, a brilliant trick is to place **your steak in the freezer for about 30 minutes before slicing**. This firming-up process makes it much simpler to achieve those signature, paper-thin slices with ease, which are crucial for quick cooking and a tender texture.
- The Right Knife Matters: When slicing the steak yourself, **always use a very sharp chef’s knife**. A sharp blade will glide through the semi-frozen meat effortlessly, creating clean, consistent slices that cook evenly and maintain their tenderness.
- Griddle Maintenance is Key: Don’t underestimate the importance of cleaning your griddle. **Clean your Blackstone immediately after cooking, while it’s still hot**. Scrape off any food debris with a griddle scraper. If there’s stubborn residue, a splash of water on the hot surface will create steam, lifting off stuck-on bits, allowing you to scrape it clean. Once clean, always wipe it down with a thin coat of vegetable oil or your preferred cooking oil. This prevents rust and keeps your Blackstone in excellent working order for years to come.
- Mind the Steak’s Tenderness: **Do not overcook the steak!** Since we’re working with very thinly sliced meat, it cooks incredibly fast. Overcooking will result in tough, dry meat, robbing your sandwich of its desired melt-in-your-mouth tenderness. Cook it quickly until just done.
- The Art of the Toasted Roll: To prevent your hoagie roll from becoming soggy under the juicy filling, **create a barrier by thoroughly toasting the inside of the roll**. A generous toast will keep the bread’s interior soft and fluffy while providing a satisfying crunch with every bite, maintaining the structural integrity of your delicious sandwich.
- Seasoning is Non-Negotiable: Even the most perfectly cooked steak and vegetables will taste bland without proper seasoning. **Do not skimp on seasoning!** Salt, black pepper, and garlic powder are your fundamental trio, but don’t hesitate to experiment with your favorite steak or all-purpose seasoning blend if you want to add your own unique twist. The right seasoning elevates all the flavors.
- Serve It Hot, Serve It Fast: The authentic appeal of a Philly cheesesteak lies in its hot, gooey deliciousness. **If you can, eat your cheesesteak immediately after assembly**. The melty cheese, juicy steak, and warm rolls are at their peak right off the griddle. Waiting too long will cause you to lose that signature melty texture and vibrant, juicy flavors.

Frequently Asked Questions About Blackstone Philly Cheesesteaks
Here are some common questions and answers to help you master your Blackstone Philly Cheesesteak:
A Blackstone Philly cheesesteak is a celebrated American sandwich, traditionally featuring thinly sliced, griddle-cooked beef (usually ribeye), combined with melted cheese, and often served with sautéed onions and bell peppers, all nestled within a toasted hoagie roll. The “Blackstone” refers to the specific type of flat-top griddle used, which provides superior heat distribution for rapid, even cooking and a fantastic crust on the meat and rolls.
For an authentic and flavorful Philly cheesesteak, ribeye or top-round steak are the best choices. Both cuts are renowned for their rich beefy taste and excellent tenderness when thinly sliced and quickly cooked. They are also readily available at most supermarkets or butcher shops. To save time and effort, ask your butcher to thinly slice the steak for you; otherwise, a brief stint in the freezer makes home slicing much easier.
While a traditional Philly cheesesteak primarily consists of thinly sliced steak with your choice of melted Cheese Whiz, American cheese, or provolone, along with optional caramelized onions or peppers, condiments like mayonnaise are generally not considered traditional toppings. However, culinary preferences are personal! Feel free to experiment with additions like mayo, ketchup, or hot peppers if you wish to customize your sandwich to your liking. There’s no wrong way to enjoy a great sandwich!
For that iconic meltiness and authentic flavor, provolone, American cheese, and Cheese Whiz are your top contenders. Cheese Whiz offers a distinct tang and creamy texture, while provolone delivers a semi-sharp richness and a satisfying “cheese pull.” American cheese, though often overlooked, melts incredibly smoothly. Using a combination, like Cheese Whiz and provolone, offers the best of both worlds in terms of flavor and texture.
Absolutely! It is crucial to properly oil your griddle before each cooking session to prevent food from sticking and to maintain the griddle’s seasoned surface. Beyond pre-oiling, always ensure your griddle is properly seasoned initially. After cooking, always clean the Blackstone griddle thoroughly and then wipe it down with a light coating of cooking oil. This preventative measure helps protect the cooktop from oxidation and rust, ensuring its longevity and performance.

- 1 red bell pepper
- 1 green bell pepper
- 2 tablespoons oil

- 1 teaspoon black pepper
- 1 teaspoon garlic powder

- 6 tablespoon Cheese Whiz
- 6 slices provolone (optional)
Instructions
- Preheat the Blackstone griddle. Set one half to medium-high and keep the other half off.
- Season the sliced steak with half of the salt, pepper, and garlic powder. Once it is seasoned, set it aside while you prepare the veggies.
- Thinly slice the onion and bell peppers.
- Oil the Blackstone griddle and toss the sliced vegetables on the hot side of the Blackstone. Season with the rest of the salt, pepper, and garlic powder. Cook the veggies for 5-10 minutes or until the onions begin to caramelize and become translucent.
- Slide the veggies to the cooler side of the grill.
- Butter the hoagie rolls, place them in the middle of the Blackstone, between the hot and cool sides, and toast them for 5 minutes while the steak cooks.
- Place the sliced steak on the hot side of the Blackstone griddle. Cook the steak for 5 minutes or until done. While the steak is cooking, use your spatula or turner to chop the meat up into smaller pieces.
- When the steak is done cooking, portion it out into three equal piles. Place equal amounts of cooked veggies on each pile of meat. Place 2 tablespoons of Cheese Whiz on each pile. Optional: for extra cheese, place 2 slices of provolone cheese on top of each pile of meat and veggies.
