Essential Ingredients for Your Blackstone Chicken Fried Rice

Creating spectacular fried rice starts with a selection of fresh, high-quality ingredients and a few pantry staples that bring authentic Asian flavors to life. Here’s a detailed look at what you’ll need:

  • Chicken: Boneless, skinless chicken breast or thighs, cut into bite-sized pieces. Thighs offer more moisture and flavor, while breast is leaner.
  • Day-Old Cooked Rice: This is crucial! Using chilled, day-old rice prevents it from becoming mushy and allows it to crisp up beautifully on the griddle. Long-grain white rice like jasmine or basmati works best.
  • Mixed Vegetables (Frozen or Fresh): A vibrant mix adds color, nutrition, and texture. Frozen peas, carrots, corn, and green beans are convenient. If using fresh, consider finely diced bell peppers, broccoli florets, or snap peas.
  • Bacon: A few strips of bacon add an incredible smoky depth and crispy texture, along with rendered fat that’s perfect for cooking.
  • Onions: Diced yellow or white onions provide a sweet and aromatic base when sautéed.
  • Eggs: Whisked eggs create fluffy pockets of protein throughout the rice, a classic fried rice component.
  • Fresh Garlic: Minced garlic is a cornerstone of Asian cuisine, imparting a pungent, aromatic flavor.
  • Fresh Ginger: Finely minced ginger adds a warm, spicy, and fragrant note that brightens the entire dish.
  • Soy Sauce: The primary seasoning, providing savory, umami-rich flavor and a beautiful brown hue. Use low-sodium to control saltiness.
  • Oyster Sauce: A thick, savory-sweet sauce that adds incredible depth and glossiness to the fried rice. Don’t skip this for authentic flavor.
  • Mirin (or Shaoxing Wine): Mirin is a sweet Japanese rice wine, while Shaoxing wine is a savory Chinese rice wine. Both add complexity and depth; choose one based on availability and desired sweetness.
  • Toasted Sesame Oil: A finishing oil that provides a distinctive nutty aroma and flavor. Add it at the very end.
  • Sugar: A touch of sugar balances the savory and salty components of the sauce.
  • Green Onions (Scallions): Sliced green onions are used as a fresh garnish, providing a mild onion flavor and vibrant color.
  • Salt and White Pepper: Essential seasonings to enhance and balance the overall taste. White pepper offers a milder, more floral heat than black pepper, traditional in Asian cooking.
  • Butter (Optional): A knob of butter can be added at the end for extra richness and sheen, especially when crisping the rice.
  • Cooking Oil: A high smoke point oil like canola, vegetable, or grapeseed oil is necessary for high-heat griddle cooking.

Step-by-Step Guide: Crafting Blackstone Chicken Fried Rice

Making delicious fried rice on your Blackstone griddle is a straightforward process when you follow these steps. The key is to utilize the different heat zones of your griddle and cook ingredients in stages to ensure everything is perfectly done before combining.

  1. Prepare Your Griddle and Aromatics: Begin by preheating your Blackstone griddle. You’ll want one side to be medium-high heat for searing and crisping, and the other side to be a low-medium heat for holding cooked ingredients warm. Once hot, add a tablespoon of cooking oil, then add the diced bacon and onions to the griddle. Cook them together, stirring occasionally, until the onions become soft and translucent, and the bacon starts to caramelize and become slightly crispy. This will take about 5-7 minutes.
  2. Cook the Vegetables and Aromatics: Push the bacon and onion mixture to the side. Add another drizzle of cooking oil to the hot side of the griddle. Add your mixed vegetables, minced garlic, and minced ginger. If using frozen vegetables, cook them thoroughly until they are completely thawed and any released water has evaporated, about 5-8 minutes. If using fresh vegetables, cook until they are tender-crisp. Once cooked, slide this vegetable mixture over to the cooler side of the Blackstone, joining the bacon and onions, to keep warm.
  3. Master the Crispy Rice: Add a generous drizzle of cooking oil (and optionally, a tablespoon of butter) to the hottest part of your griddle. Spread the cold, cooked rice evenly over this oiled surface. Immediately pour about two-thirds of your prepared fried rice sauce over the rice. Using your spatula, thoroughly mix the rice to ensure every grain is evenly coated with the rich sauce. Spread the sauced rice into a thin, even layer across the hot griddle. Allow it to cook undisturbed for 5-10 minutes, or until it develops your desired level of crispiness. The key to that coveted slight crunch is leaving it alone to develop a crust. Once achieved, gently push the crispy rice over to the cooler side of the griddle with the other cooked ingredients.
  4. Scramble the Eggs: Create a clear space on the hot side of the griddle. Add a splash of cooking oil. Pour your whisked eggs onto this hot surface. Scramble the eggs quickly with your spatula until they are fully cooked and fluffy. Once done, slide the scrambled eggs over to the cooler side to join the rest of the ingredients.
  5. Sear the Chicken: Clear another section on the hot side of the griddle. Add a final drizzle of cooking oil. Place your seasoned chicken pieces onto the hot surface. Cook, flipping occasionally, until the chicken is golden brown on all sides and no longer pink in the middle. Ensure the chicken reaches an internal temperature of 165°F (74°C). This usually takes 5-7 minutes depending on the size of your chicken pieces.
  6. Combine and Serve: Once the chicken is cooked, bring all the ingredients – the crispy rice, vegetables, bacon, onions, and scrambled eggs – together towards the hot side of the griddle. Add the remaining fried rice sauce and the sliced green onions. Use your griddle spatulas to thoroughly mix all the components, ensuring everything is well combined and heated through. Taste and adjust seasoning with additional salt or white pepper if needed. Serve immediately while hot for the best experience.

Pro Tips for Achieving Flawless Fried Rice

While the recipe is straightforward, a few expert tips can elevate your Blackstone Chicken Fried Rice from good to absolutely extraordinary:

  • Achieve the Perfect Rice Crisp: The hallmark of great fried rice is that slightly crisp, almost toasted texture on the rice grains. To achieve this on your Blackstone, spread the rice out in a thin, even layer across the hottest part of the griddle. Crucially, don’t stir it constantly. Allow it to sit undisturbed for several minutes to develop a beautiful golden crust. Using a healthy serving of cooking oil (or a mix of oil and butter) will aid in this process, ensuring uniform crispiness without sticking.
  • Timing is Everything: Cook Proteins Last: A common mistake is to cook the meat first and let it sit on a cooler part of the griddle for too long. While the Blackstone is great for keeping food warm, delicate proteins like chicken can easily overcook and dry out if held for extended periods. It’s best to cook the chicken just before combining all the ingredients, ensuring it remains juicy and tender when served.
  • Taste and Adjust Your Sauce: The fried rice sauce is a concentrated blend of powerful flavors – salty soy sauce, sweet mirin, and umami-rich oyster sauce. Always taste your sauce after mixing, and then add it to the rice in increments. After stirring some of the sauce into the rice, taste it again. This allows you to adjust the amount as you go, preventing an overly salty or sweet dish and ensuring a perfectly balanced flavor profile.
  • Use Day-Old, Chilled Rice: This tip cannot be stressed enough. Freshly cooked rice is too moist and will steam rather than fry, resulting in a mushy texture. Day-old rice, kept refrigerated, dries out slightly, making it ideal for absorbing the sauce and getting wonderfully crispy.
  • Don’t Overcrowd the Griddle: While the Blackstone offers a large cooking surface, resist the urge to pile everything on at once, especially if you’re making a massive batch. Cook ingredients in batches if necessary to ensure even cooking and proper browning. Overcrowding lowers the griddle temperature and leads to steaming instead of frying.
  • High Heat is Your Friend: Fried rice thrives on high heat. Ensure your Blackstone is ripping hot for the best results, especially when adding the rice. This flash-frying technique helps achieve that desired crisp texture and “wok hei” flavor.

Perfect Pairings: What to Serve with Blackstone Chicken Fried Rice

This Blackstone chicken fried rice is incredibly hearty and flavorful enough to stand alone as a complete meal. However, if you’re looking to elevate your dinner into a full Asian-inspired feast, consider pairing it with some complementary dishes. Here are a few delectable ideas:

  • Sticky Teriyaki Turkey Wings: The sweet and savory glaze of teriyaki wings would perfectly complement the rich flavors of the fried rice.
  • Miso Teriyaki Black Cod: For a more elegant touch, the flaky, buttery texture of black cod with a savory miso teriyaki glaze offers a sophisticated contrast.
  • Miso Glazed Sea Bass: Similar to black cod, a tender sea bass fillet with a delicate miso glaze would make a fantastic and light accompaniment.
  • Asian Teriyaki Meatballs: These flavorful meatballs make an excellent appetizer or a side dish, providing another protein option with a delicious sauce.
  • Crispy Egg Rolls or Spring Rolls: Classic takeout sides that add a delightful crunch and can be easily prepared in an air fryer or deep fryer.
  • Steamed Dumplings or Potstickers: Savory dumplings, either pan-fried or steamed, offer another texture and flavor dimension.
  • Light Soup or Salad: A simple hot and sour soup or a fresh Asian-inspired salad with a ginger-sesame dressing can balance the richness of the fried rice.

Frequently Asked Questions About Chicken Fried Rice

Can you freeze fried rice?

Absolutely! One of the many reasons to love this Blackstone chicken fried rice recipe is its ability to produce a large batch, perfect for enjoying now and saving for later. I often freeze about half of the recipe. For reheating, you have a few options: you can let it thaw overnight in the refrigerator and then reheat it on the Blackstone griddle until it reaches your desired level of crispiness, which is my preferred method for maintaining texture. Alternatively, for a quick dinner, simply heat it in the microwave for 4-5 minutes. If you’re short on time and can’t thaw it beforehand, you can defrost it in the microwave using the defrost setting, or toss the frozen chicken fried rice directly onto your preheated Blackstone. Cook it, stirring frequently, until the rice has defrosted and all the released moisture has evaporated. Continue cooking until the rice develops that desirable slight crunch.

What types of meat work best in fried rice?

The beauty of fried rice lies in its incredible versatility when it comes to protein! While chicken is fantastic, feel free to get creative. You can use virtually any meat. Leftover brisket burnt ends or shredded smoked turkey add unique depth. Bite-sized pieces of pork, beef (like steak or ground beef), or even succulent shrimp are all excellent choices. For an adventurous twist, consider making a “combo” fried rice with several different types of meat for an even richer flavor profile. There are truly no strict rules here – let your preferences and what you have on hand guide you!

Can you substitute chicken for a vegetarian option?

Of course! Fried rice is incredibly adaptable for vegetarian diets. The most traditional route is to use tofu. Opt for extra-firm tofu, pressed well to remove excess water, then cubed and fried until golden and crispy. This preparation ensures it gets a fantastic exterior texture and holds up beautifully within the fried rice without becoming mushy. Another excellent option is to use plant-based meat substitutes like Beyond Meat or Impossible Burger, which can mimic the texture and savory flavor of ground meat. You can also simply load up on extra vegetables for a satisfying meat-free version.

What is in classic fried rice sauce?

The quintessential fried rice sauce is simple yet profoundly flavorful, acting as the backbone of the dish. It typically combines soy sauce (for saltiness and umami), oyster sauce (for savory depth and a touch of sweetness), mirin or Shaoxing wine (for complexity and a hint of sweetness/alcohol), and a touch of sugar (to balance the flavors). Toasted sesame oil is usually added at the very end for its distinctive nutty aroma. If you can’t find Shaoxing wine, mirin is a good substitute, though it’s slightly sweeter, so you might need to reduce the added sugar. Some recipes also include a dash of fish sauce for extra umami. The most important tip for the sauce is to continually taste and adjust it as you mix it into the rice, ensuring it’s perfectly balanced and not overly salty or sweet for your personal preference.

4.8 / 5 based on 5 reviews

Ingredients

Fried Rice Sauce

  • 4 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon mirin or Shaoxing wine
  • 2 teaspoons toasted sesame oil
  • 1 teaspoon sugar

For the Fried Rice

  • 5 strips of bacon
  • 1 small onion, diced
  • 2 cups diced veggies, frozen or fresh*
  • 3 to 4 garlic cloves, minced
  • 2 teaspoons minced fresh ginger
  • 4 tablespoons cooking oil
  • 4 cups cooked, cold rice
  • 3 eggs, whisked
  • 1 chicken breast, chopped (or 2 boneless thighs)
  • 3 green onions, sliced
  • 1/2 teaspoon salt
  • 1/2 teaspoon white or black pepper

Optional

  • 2 tablespoons butter
  • 4 to 6 fried eggs to serve over the fried rice

Instructions

  1. Heat the Blackstone griddle. One side should be medium-high heat, and the other should be low-medium.
  2. Prepare the fried rice sauce by combining all of the sauce ingredients (soy sauce, oyster sauce, mirin/Shaoxing wine, toasted sesame oil, sugar) in a small bowl. Whisk until well combined.
  3. Place the chopped chicken into a bowl and season it with salt and pepper. Add 2 tablespoons of the prepared rice sauce to the chicken and mix well to coat. Set the rest of the fried rice sauce to the side and allow the chicken to marinate for at least 10 minutes while you prepare other fried rice components.
  4. Place the strips of bacon on the hot side of the griddle and cook for 2-3 minutes. Once slightly rendered, cut the bacon into bite-size pieces directly on the griddle using your spatula. Add the diced onions and continue to cook the bacon and onions together until the bacon is fully cooked and crispy, and the onions are soft and translucent.
  5. Add the vegetables, minced garlic, and minced ginger to the griddle. Cook for 3-4 minutes, or longer if using frozen vegetables (cook until all water evaporates). Once the vegetables are tender-crisp, push this entire mixture (bacon, onions, veggies, garlic, ginger) over to the cooler side of the griddle to keep warm.
  6. Add a generous drizzle of cooking oil (and optional butter) to the hot side of the Blackstone griddle. Add the cold, day-old rice and toss it thoroughly to coat it in the oil. Pour the remaining fried rice sauce (reserve a small amount for final taste adjustment) over the rice and mix it well to ensure the rice is evenly coated with the sauce.
  7. Spread the sauced rice out in a thin, even layer on the hot griddle. Let it cook undisturbed for 5-10 minutes, or until it reaches your desired level of crispiness. The longer it cooks without disturbance, the crispier the rice will become. Once perfectly crisp, push the rice over to the cooler side of the griddle with the vegetable mixture.
  8. Add another drizzle of oil to a clear spot on the hot side of the Blackstone griddle. Pour on the whisked eggs and quickly stir them with your spatula until they are fully cooked and fluffy. Push the cooked eggs over to the cooler side of the griddle to join the other ingredients.
  9. Pour a drizzle of oil on the hot side of the griddle and add the marinated, chopped chicken. Cook the chicken, flipping as needed, until it is golden brown on all sides and no longer pink in the center, ensuring it reaches an internal temperature of 165°F (74°C).
  10. Once the chicken is cooked, slide all the ingredients (rice, vegetables, eggs, bacon, onions) from the cooler side of the Blackstone towards the chicken. Mix everything thoroughly to combine all the ingredients. Stir in the sliced green onions and taste. Add additional salt and white or black pepper to taste if needed.
  11. Transfer the finished fried rice to individual plates or a large serving platter. Optionally, top each serving with a freshly fried egg for extra richness. Serve hot and enjoy your homemade Blackstone Chicken Fried Rice!

Notes

  • Pour the rice sauce over the rice in increments so that you can taste-test the flavor along the way. Adjust the amount of sauce as you go so that you don’t overpower the rice with too much salt or sweetness.
  • Spread the rice out in a thin layer on the Blackstone. Be sure to use plenty of oil or butter in this step. This will help you to achieve that perfect crispy texture on the rice grains, a key characteristic of excellent fried rice.
  • Cook the meat last. If you cook the meat too early and let it sit on a cooler part of the griddle for too long, it could overcook and become dry while you are preparing the rest of the fried rice components.
  • For best results, always use cold, day-old cooked rice. Freshly cooked rice has too much moisture and will result in a mushy fried rice texture.
  • Don’t be afraid to use plenty of oil for frying. This helps prevent sticking and promotes crispiness.
